Lina’s class made an international food day. There were sushi rolls, samosas, falafel wraps, pierogi, tacos, jollof rice, a tray of perfect Spätzle, and two pies — one cherry, one a mystery savoury one with rosemary. Mr. Flint had two of everything, on what he called strict research grounds.

Spätzle is a German pasta from Swabia. The dough is made of eggs, flour, and water. We press it through a small board into boiling water. We eat Spätzle with cheese and crispy onions. The smell of frying onions fills the kitchen for an hour. I love eating Spätzle on cold Sundays — it tastes like coming home.
